Hi Cheryl. I wouldn’t recommend to add mushrooms because they will release a lot of water and make rice more mushy. You could but I wouldn’t, I also think they won’t add that much more flavor without being sauteed first. So, you could do that and then add below rice layer. I would saute them in a pan separately and add at the end, if it was me. Glad you are enjoying my recipes!

Hi Tiffany. So glad you loved this recipe! I would try 25 minutes. Those extra 3 minutes should take care of a bit of a crunch left in the rice. No, chicken won’t overcook in that short period of time. You can also try 26-27 mins next time. Good luck!

Very delicious! I used frozen chicken breast and brown rice. The rice was still not fully cooked so I took out the chicken and I let it sit in Keep Warm for 20 min.

I was wondering if I should increase the cooking time and for how many minutes? Also, if i increase cooking time, would it make the chicken overcooked? Any ideas?
