How did you measure your almond flour? Did you skim off the top of measuring cup with a knife to level it? That’s how flours should be measured. Sounds like too much of dry ingredients.

Even with strict adherence to the recipe, using older, wet bananas, my mixture was rather dry…The blender shook, choked a couple of times, and stopped entirely after I added the flour. After, I added 3 taste enhancements with a spatula (orange peel, cranberries, chocolate chips), the baked muffins were still not as tasty and moist as I would have imagined.

I thought these turned out great! I was suspicious because of the no added sugar and no oil but I was proven wrong! Don’t get me wrong, they taste healthy but I also prefer that. Thanks for the great recipe!

That’s weird. My blender wouldn’t mix also but I just used a spatula to combine the flour with the rest. I’m surprised you had to add liquid! Mine turned out great!

I’ve just made these muffins. My mix looked just like the photos. I used freshly bought almond flour and stored it in the fridge before making them. My bananas were very ripe, and everything mixed up well in the blender. I added walnuts and chopped-up dates. These are very healthy ingredients, taste great and I will definitely make them again.

I think you didn’t use overripe bananas and large enough. If bananas are not ripe, their flesh is denser and thicker and that’s the base of the liquids part of these muffins.

Sorry, but something is wrong with this recipe. I have checked back that I followed all the steps, but firstly the mixture was so dry that the blender couldn’t mix it so I had to add a lot of extra liquid (+ an extra egg).. and even then, they were still dry when finished. Secondly, 3 cups of almond flour… are you sure? They are hardly raising in the oven so I suspect the baking powder to flour ratio is totally off here?

I really cant recommend trying this one.
