Tips for Cooking with Zucchini

  • Types of zucchini: You can use green zucchini or yellow squash, large or small zucchini in these zucchini recipes interchangeably.
  • Don’t overcook: Zucchini consists of over 90% water by weight. Follow the recipe and stop cooking squash when it’s still firm and might appear undercooked.
  • Large garden zucchini: If the recipe is calling for a small-medium zucchini, cut a large zucchini in half. Slice it into 2-inch rounds on the angle.
  • Freezing: Zucchini doesn’t freeze well because of the high water content. The only way I would recommend is to freeze cubed or grated zucchini and then use it in soups and baking later on.
  • Cooking methods: When baking or grilling sliced rounds, you want to make sure they are cut thick enough in uniform sizes, to cook evenly and not become soggy.
  • Zucchini skin: No need to peel zucchini, even when you’re baking with it. Zucchini skin is edible and easily digestible and comes with a lot of nutrients. Just make sure you wash it first!

Storing and Reheating Zucchini Recipes

Instructions

  • Preheat large ceramic non-stick skillet on medium heat and swirl oil to heat. Add onion, garlic and bell pepper and saute for 3 minutes, stirring occasionally.
  • Push vegetables to one side of the skillet. Add chicken and sprinkle with 1 tsp cumin, salt and pepper. Cook for 5 minutes, stirring occasionally.
  • Add corn, black beans, tomatoes, zucchini, taco seasoning and remaining cumin. Stir well, cover with a lid and cook for 10 minutes on low-medium heat.
  • Sprinkle with shredded cheese, cover and cook until cheese has melted. Garnish with green onion and cilantro. Serve hot on its own; or with Instant Pot quinoa or Instant Pot brown rice.

  • Store: Refrigerate in an airtight container for 3-4 days. Do not freeze.
  • To Reheat: Simmer on low heat in covered skillet for 5 minutes. No additional water or oil is needed to reheat if you use a non-stick skillet.
  • Do not over cook the zucchini. Zucchini is comprised of 95% water. The longer you cook zucchini, the more water it releases. Follow the recipe and cooking times and do NOT cook until the zucchini appears soft and cooked (or your dinner will be mushy).

I started doing freezer meal prep many years ago. Then I went on a business trip and left a few frozen meals for my husband. He kept raving and raving about how easy and tasty each dinner was. He was truly blown away how my easy freezer meals really made his cooking easy. And last time I heard my husband rave like this was about his new truck!

How to Make Healthy Freezer Meals

Here is a detailed video how I make 5 healthy freezer meals at once. Below I have detailed instruction with photos. Each freezer meal recipe is located below that.

Print recipes and shopping list: Pick Healthy Freezer Meal Prep #1, #2, #3 or all 4 out of 4 freezer meal preps below.

Each meal prep contains 5 recipes with freezing instructions and complete shopping list – click button below each title. That’s total of 20 recipes in this freezer meals post.

I found it takes about 2 hours to meal prep 5 recipes and is the most feasible time for a busy mom. After that, I am tired, but you can do 10 recipes at a time, if you wish.

Gather ingredients: Gather meat, vegetables, cans and sauce jars, and grains on a counter. No spices yet. Label gallon size Ziploc bags with instructions.

Prep meat, veggies and cans: Cut meat, peel vegetables (do not chop yet) and open cans.

Start assembling freezer meals: Fill each bag with tomato products first (if recipe has any and if cooking in Instant Pot), then meat, and stand up right.

Chop vegetables: Chop basic veggies like carrots, celery, onion, garlic, potato etc. for each recipe individually. Then place on top of meat (if any) in each bag. It helps to keep measuring simple.

Add dry ingredients: Measure and add grains, beans and any other dry ingredients.

Add liquids: Add liquids from cans and jars like diced tomatoes or tomato sauce, coconut milk, tomato paste and hot sauce.

Don’t add water or broth now: Each freezer meal recipe below has instructions how much broth or water to add right before cooking. Liquid takes a lot of space in the bag and we don’t want it frozen.

Add spices: Pull out spices, measure them out and add to each freezer meal bag.

Prepare bags for freezing: Let out as much air as possible and seal tightly each bag.

Freeze the freezer meals: Stand bags upright and and freeze like that. Round shape is the best. I usually tie 2 corners with a rubber band or a big clip to shape the bag.

What Are the Best Containers for Freezer Meals?

Here are my recommendations for containers for healthy freezer meals in my order of preference.

To write on reusable bags and containers, I stick a few rows of overlapping painter’s tape as a label and write on it with a sharpie. It can be easily peeled off and discarded after use.

Tips for Best Results

Here are my top tips for the best healthy freezer meal prep from the first try!

  • Container size. Pick your container with the amount of ingredients in the recipe in mind. “Will they fit to freeze?” And the size of your preferred cooking appliance in mind. “Will my frozen meal fit into Instant Pot or slow cooker?”
  • Round shape is the best. With both slow cooker and Instant Pot. Use round containers or place filled bags in round bucket and freeze until shape forms.
  • Thaw for 2 minutes. Place your freezer meal in a container in a sink or large bowl with hot water and let defrost for 2-5 minutes to help slide out easily. You can also let it thaw longer and break frozen food into a few pieces, if necessary.
  • Scrape” the walls. If any spices left on the walls of a container and recipe calls for water, rinse container with it and then add to cook.
  • Appliance to use. To cook healthy freezer meals, you need to own at least 6 quart or 8 quart Instant Pot, or large slow cooker.
  • Cook from frozen. For all Instant Pot and vegetarian slow cooker freezer meal recipes.
  • Tomatoes go on top in Instant Pot. If cooking freezer meal in the Instant Pot and it contains anything tomato, make sure they are on top. Otherwise it will burn.
  • Meat in slow cooker. For slow cooker freezer meals with meat you have to thaw freezer meal in the fridge for 24 hours before slow cooking.

FAQs

Are these freezer meals healthy?

Yes. All freezer meals on this list are made with fresh or frozen meat, vegetables, whole grains and as clean as possible canned goods. You will notice we do not use pre-made bottled sauces and dry seasoning packets full of preservatives, sodium, sugar and chemicals.

Many other freezer meals on the internet might contain fewer ingredients but they are far from healthy. I try to use very simple and repetitive ingredients in many of my healthy recipes. You can always add less or no salt at all to follow a low sodium diet.

Are healthy freezer meals worth it?

Freezer meals last about 3 months in the freezer. Let as much air out as possible from the bag before sealing, and freezer burn won’t be a problem. And even if you have a little one, the final taste shouldn’t be affected.

What’s the best way to thaw freezer meals?

The best way to thaw a freezer meal is in the refrigerator. It takes about 24 to 48 hours per bag and it depends on its size. Plan for 5 hours per pound of food.
You can also defrost freezer meal in a bowl with cold water. You will have to change it every 30 minutes and it will take approximately 5 hours to thaw. Good thing you have to do it only for slow cooker meat recipes.

Do you need an Instant Pot to cook freezer meals?

Yes and no. You can cook frozen meal prep in a slow cooker with the exception of meat recipes that have to be thawed in the refrigerator 24 hours prior. You will also have to plan to turn on your crockpot in the morning to have ready dinner on time. For these 2 reasons alone, I believe it is worth it to buy an Instant Pot – you can cook all meals from frozen after work using an electric pressure cooker.

What are the best vegetables to use in freezer meals?

Both. I use mostly fresh vegetables because they are cheaper but require more prep. But I love to use frozen corn, no need to thaw because we are making a frozen dinner. Frozen vegetables are pre-washed and chopped, definitely a time saver. You can combine both – doesn’t matter at all.

  • 5 garlic cloves, minced
  • 1 large onion, chopped
  • 3 large carrots, chopped
  • 3 large celery stalks, chopped
  • 2 x 15 oz cans cannellini beans, low sodium, drained & rinsed
  • 1/2 cup Frank’s red hot sauce
  • 2 tbsp maple syrup or honey
  • 1 tbsp cumin
  • 1 tbsp chili powder
  • 1 tbsp smoked paprika
  • 2 lbs chicken breasts, skinless & boneless
  • 28 oz can diced tomatoes, low sodium

INGREDIENTS TO SERVE:

  • 1/2 cup blue cheese crumbles or cream cheese
  • Cilantro and/or green onion
  • Lime
  • Tortilla chips
  • INSTANT POT: Pressure cook with 1 cup broth on High from frozen for 30 minutes with Quick Release.

For cooking in Instant Pot, it is important to finish with tomatoes on top to avoid “Burn”.

  • Brown rice

  • BEFORE FREEZING: Swoosh it all around with your hands to make chicken breasts separated with other ingredients.

  • INSTANT POT: Cook from frozen on High pressure for 30 minutes with Quick Release.
  • SLOW COOKER: Thaw in the fridge for 24 hours before cooking. Cook on Low for 8 hours or on High for 4 hours.

  • 1.5 lbs boneless & skinless chicken breasts
  • 1 egg, large
  • 2/3 cup long or short coconut flakes, unsweetened
  • 1/4 cup any flour (I used whole wheat)
  • 1/2 tsp garlic powder
  • 1/2 tsp salt
  • Ground black pepper, to taste
  • HOW TO FREEZE: Cut chicken breasts into 1 inch wide strips. Dip both sides of each chicken tender into an egg wash, then coat in coconut flakes, flour, garlic powder, salt and pepper mixture. Freeze coated but uncooked fingers on a baking sheet for a few hours, then transfer to a Ziplock bag and freeze for up to 3 months.
  • BEFORE COOKING: Spray chicken fingers with cooking spray.
  • OVEN: Bake from frozen at 425 degrees F for 30-35 minutes, possibly turning in the middle (depends on the oven – just keep an eye on them).

Increase heat to medium, add pepper and cook for 5 more minutes, stirring occasionally. Transfer to the bag with other ingredients to freeze.
  • BEFORE COOKING: Add 2 cups water or any low sodium broth.
  • INSTANT POT: Cook on High pressure from frozen for 20 minutes. Quick release.

INGREDIENTS TO FREEZE:

  • 8 whole wheat large 8” tortillas
  • 14 oz can black beans, rinsed & drained
  • 1 cup corn
  • 1 large bell pepper, diced
  • 1/3 cup cilantro, finely chopped
  • 1/3 cup red onion, minced
  • 2 tsp cumin
  • Pinch of salt
  • 2 2/3 cups cheese that melts well, shredded (cheddar, mozzarella)
  • HOW TO FREEZE: For each quesadilla, assemble and then wrap in plastic wrap as tightly as possible without compromising its shape. Lay flat in a gallon size Ziploc bag, squeeze as much air out as possible, seal and freeze for up to 3 months.
  • OVEN: Bake from frozen in preheated to 350 degrees F oven for 25-30 minutes.
  • PANINI PRESS: Grill from frozen until ready.

Transfer to a large resealable bag. Add onion, carrots, celery and garlic; sauté for 5 minutes, stirring occasionally. Transfer to the bag along with other ingredients to freeze.
  • BEFORE COOKING: Add 7-8 cups low sodium vegetable broth.
  • INSTANT POT: Cook from frozen on High pressure for 5 minutes. 20 minutes Natural Release.

  • HOW TO FREEZE: Cut chicken into 1/2 inch thick strips lengthwise and pound to make tender. Freeze coated but uncooked fingers on a baking sheet for a few hours, then transfer to a Ziplock bag and freeze for up to 3 months.

  • BEFORE FREEZING (SLOW COOKER): Preheat medium skillet on low – medium heat and add 1 tbsp olive oil. Add onion, garlic, taco seasoning, onion powder, garlic powder, cumin, smoked paprika, cayenne pepper, salt and pepper, and saute for 3 minutes, stirring occasionally. Add ground turkey and saute for 5 minutes, stirring and breaking into small pieces with spatula often. Transfer to the bag with other ingredients to freeze, and swoosh things around to mix tomato paste with turkey to prevent burning.
  • BEFORE COOKING: Add Slow Cooker – 1 1/4 cups, Instant Pot – 1/2 cup low sodium chicken broth or vegetable broth.
  • INSTANT POT: Cook from frozen on High pressure for 12 minutes. Quick release.
  • SLOW COOKER: Cook from frozen for 3 hours on High or 6 hours on Low.
  • AFTER COOKING: Whisk 2 tbsp cold water with 2 tbsp cornstarch and add to Slow Cooker/Instant Pot. Press High heat or Saute, stir and cook (covered in slow cooker) until taco meat has thickened.

  • 1 cup dried black beans, rinsed & drained
  • 2-3 large chicken breasts, boneless & skinless
  • 2 tbsp taco seasoning, low sodium
  • 1 tbsp cumin
  • 1 tbsp garlic powder
  • 1 tsp salt
  • 3 cups water or low sodium broth

INGREDIENTS TO WRAP:

  • 1 cup salsa
  • 2 cups corn, frozen or cooked
  • 1 bunch cilantro, chopped
  • 1 bunch green onion, chopped
  • 12 oz any soft cheese, shredded
  • 2 cups green or red cabbage, thinly shredded
  • 17 large whole wheat tortillas
  • TO COOK IN INSTANT POT: Add all Ingredients to Cook and Cook on High pressure for 20 minutes with Quick Release after.
  • STOVETOP: This recipe is not meant for a slow cooker. For stovetop version, please check original chicken burrito recipe.
  • AFTER COOKING: Shred chicken using 2 forks right in the pressure cooker and add remaining Ingredients to Finish (except tortillas).
  • TO WRAP & FREEZE: Tear 17 sheets of aluminum foil. Place tortilla on top of foil, add 3/4 cup of filling below the center and near to the edge closer to you. Top with some shredded cabbage and cheese. Fold up the bottom to almost cover the filling, then fold up the edges, roll up tightly and then roll again in foil. Freeze for up to 3 months. 
  • TO REHEAT: Thaw overnight in the fridge. Bake at 450 F degrees for 20-25 minutes or broil for 10-15 minutes. You can also warm burritos up in a microwave without tin foil – 2-5 minutes.

Ground Turkey Pasta Bake

  • 1 lb ground turkey, extra lean
  • 3 cups (10 oz) whole wheat penne/fusilli pasta, uncooked
  • 4 – 5 cups kale stems, removed & chopped
  • 1 large onion, finely chopped
  • 4 large garlic cloves, minced
  • 1 tbsp olive oil, extra virgin
  • 1 tbsp oregano, dried
  • 1 tsp rosemary, dried
  • 1 tsp basil, dried
  • Pinch of red pepper flakes
  • 1/2 tsp salt
  • Ground black pepper, to taste
  • 28 oz tomato sauce, low sodium
  • 1 tbsp honey or maple syrup
  • 1 tbsp balsamic vinegar
  • 1 cup pasta water
  • 2 cups 6 oz mozzarella cheese, shredded & divided
  • 1/3 cup Italian parsley, chopped
  • Cooking spray
  • TO ASSEMBLE: Cook pasta in a pot. In a skillet, saute onion and garlic 3 minutes, stirring occasionally. Saute oregano, rosemary, basil, pinch of red pepper flakes, salt and pepper for 30 seconds, stirring a few times. Add ground turkey and cook for another 5-7 minutes, breaking meat into pieces and stirring occasionally. Add tomato sauce, honey, balsamic vinegar and pasta water. Stir, bring to a boil and simmer for 2 minutes. Add kale and stir to combine. Now add cooked pasta and stir to combine more.
  • TO WRAP & FREEZE: Transfer half of the mixture in previously prepared baking dish and sprinkle with 1 cup cheese. Add remaining pasta meat mixture and sprinkle with remaining 1 cup cheese. Wrap tightly with plastic and aluminum foil on top.
  • TO COOK: When ready to eat, remove from the freezer and warm up on a counter for 30 minutes to prevent dish from shattering in the oven. Bake from frozen in preheated 350 degrees F oven for 40 minutes.

Healthy Black Bean Burgers

INGREDIENTS TO FREEZE:

  • 1 cup white or brown rice, cooked (measured after)
  • 2 x 14 oz cans low sodium black beans, drained & rinsed
  • 2 large eggs 
  • 3/4 cup grated zucchini, liquid squeezed out (measured after)
  • 1 medium onion, minced or pureed
  • 2 large garlic cloves, minced or grated
  • 1 cup oat flour for GF version or whole grain breadcrumbs
  • 1 1/4 tsp salt
  • 1 tsp cumin
  • 1 tsp chili pepper in adobo sauce, minced
  • TO ASSEMBLE: Cook rice as per package instructions. In the meanwhile, in a large bowl, add beans and mash with a masher until coarse puree with some bean chunks forms. Add eggs, zucchini, onion, garlic, oat flour, salt, cumin, pepper in adobo, and mix with spatula very well.
  • TO FREEZE: Scoop 1/2 cup for smaller or 3/4 cup mixture for larger burgers and form into a patty. Lay patties on a baking sheet lined with parchment paper, freeze completely and transfer to a large Ziploc bag.
  • TO COOK: Cook from frozen on preheated large non-stick ceramic or well-seasoned cast iron skillet on low – medium heat with 1-2 tbsp of oil, for 7-9 minutes per side.

INGREDIENTS TO FREEZE:

  • 1 lb ground turkey
  • 1 large onion, diced
  • 3 large garlic cloves, minced
  • 1 bell pepper, diced
  • 1 1/2 cups corn, canned or frozen
  • 14 oz can low sodium red kidney beans, rinsed and drained
  • 14 oz can low sodium cannellini or navy beans, rinsed and drained
  • 14 oz can low sodium pinto beans or black eyed peas, rinsed and drained
  • 2 tbsp chili powder
  • 1 tsp cumin
  • 1 tsp oregano, dried
  • 1/2 tsp paprika
  • 3/4 tsp salt
  • 28 oz can diced tomatoes, low sodium
  • 6 oz can tomato paste, low sodium

INGREDIENTS TO SERVE:

  • Green onion cilantro, cheese, plain yogurt (for toppings)
  • BEFORE FREEZING: Cook ground turkey until small pieces for 5 minutes, stirring constantly. Transfer to a Ziploc bag with other ingredients (for Instant Pot add tomato products right after meat).
  • BEFORE COOKING: Add 1 cup water or low sodium broth.
  • INSTANT POT: Cook from frozen on High pressure for 20 minutes. Quick release.
  • SLOW COOKER: Cook from frozen for 4 hours on High or 8 hours on Low.

Quinoa Falafel

  • 2 14 oz cans low sodium chickpeas, drained & rinsed
  • 1 medium onion, coarsely chopped
  • 8 garlic cloves, large
  • 2 cups parsley, packed
  • 4 tsp cumin, ground
  • 2 tsp coriander, ground
  • 4 tbsp sesame oil
  • 2 tbsp cornstarch
  • 3 tsp salt
  • 1/2 cup water

INGREDIENTS TO FINISH & SERVE:

Tahini sauce:

  • 1 cup tahini
  • 1 cup water
  • 2 lemons, juice of
  • 1 garlic clove, large
  • 1 tsp salt

  • 14 whole wheat pitas for serving
  • 1 long English cucumber, thinly sliced for serving
  • 3 tomatoes, thinly sliced for serving
  • TO ASSEMBLE: Cook quinoa as per package instructions. In the meanwhile, in a large food processor, add chickpeas, onion, garlic, parsley, cumin, coriander, sesame oil, cornstarch, salt, water and blend until semi-smooth. In a large bowl, combine cooked quinoa and blended mixture, mix with spatula very well.
  • TO FREEZE: Using small scoop, scoop falafel mixture, packing it tightly, roll into golf size balls (helps to dip hands in water in between) and place on prepared baking sheets about 1 inch apart. Freeze completely and transfer balls to a large Ziploc bag.
  • TO COOK: Spray with cooking spray, bake from frozen in 450 F degrees oven for 35 minutes or until golden brown and crispy, turning once.

Serving suggestion: Serve falafel warm, in a pita pocket with some sliced cucumbers, tomatoes and drizzle with lots of tahini sauce (blended in a food processor or blender).

Carrot ginger salad dressing lies somewhere between the honey mustard and Asian dressing with added creaminess and nutrients from carrots. It’s zingy, bright, and super fresh.

Serving suggestion: Drizzle it over everything including salads or 30 minute meals like stir fries!

How to Store Healthy Salad Dressings

While each salad dressing may differ slightly with its storage recommendations, most often storing them in a glass mason jar with a lid or glass airtight container is your best option!

Store: Refrigerate oil-based salad dressing for 1-2 weeks, dairy dressing for 5-7 days and avocado based salad dressing for 2-3 days.

Freeze: I don’t recommend to freeze homemade healthy salad dressings. They taste best when fresh!

Separation: If it is an oil based dressing, the oil may separate during refrigeration. That is normal! Just bring it to room temperature and shake your jar, whisk or blend to combine it again.

Solidifying: It is normal for oil to solidify in the fridge. Place glass jar with the dressing in a bowl with hot water for 5-10 minutes, in a microwave for 1-2 minutes or on a kitchen counter for 30 minutes to warm up. Then shake vigorously to combine.

I don’t think there one healthiest salad dressing. Sometimes it’s as simple as making a few healthy ingredient swaps. Think yogurt in place of mayo. Healthy fats come next, whether it’s using extra virgin olive oil or yogurt as the base while avoiding hydrogenated and unhealthy fats. Also, keep an eye on sugar and sodium levels, and use just enough to balance the dressing.

Tips for Baking Healthy Muffin Recipes

Here are my top tips for making healthy muffins I have learnt over the years in the kitchen.

  • Always follow the recipe: Baking is a science! Unlike with soups when it comes to baking, 99% of times you have to follow the recipe. Main reason is not to offset the ratio of dry to liquid ingredients.
  • Do not substitute flours: All flours act differently in baking! Coconut flour is more absorbing that wheat flour. Oat flour weighs less than wheat flour. And almond flour is made out of nuts and doesn’t absorb moisture at all. Unless healthy muffin recipe lists an acceptable swap, I recommend to follow the recipe as close as possible!
  • Don’t overmix the batter: When making muffins with gluten, make sure not to overmix the batter if you don’t want dense and chewy results. Instead, the wet ingredients and dry ingredients should be mixed until just combined. Don’t worry if there are some lumps or white patches of flour, it’s normal.
  • Use the spoon and level method: When measuring flour so you don’t end up with dense muffins. The best way to do this is to spoon the ingredient into the cup and then use the back of a knife to level the top. Watch this quick tutorial how to do it properly.
  • Don’t over bake your healthy muffins: Bake as long as recipe says or until a toothpick inserted in the center comes out clean. Even if your healthy muffins do not look brown enough, remove them from the oven after a toothpick test. They will keep cooking with residual heat.
  • Check the leavening agents: This tip goes for any baking with leavening agents. To test baking powder, combine 1 teaspoon with 1/4 cup hot water and watch for immediate fizzing. To test baking soda, use a small splash of vinegar instead of water.

For healthy muffin recipes, I try to minimize empty calories by relying on more nutritious flours, unrefined sweeteners, using less oil or yogurt and applesauce instead of it. The result are muffins packed with fiber, whole grains, natural sweeteners, and healthy fats. They won’t spike your blood sugars or have you craving more snacks.

What does applesauce do to muffins?

Applesauce replaces oil and makes muffins moist cutting back on calories and fat. In most healthy muffin recipes, I still recommend to add even a few tablespoons of oil to make muffins less gummy.

When can I use yogurt instead of applesauce?

You can substitute applesauce for yogurt in most muffin recipes. Keep in mind yogurt is tangy and less sweet than applesauce, so be sure to add 2-3 tablespoons of maple syrup or sugar to compensate for it. It should not offset your muffin batter consistency.

Can I use all-purpose flour instead of whole wheat flour?

Yes and no. Some muffin recipes can take this 1:1 substitution but most cannot. General rule of thumb is to use 1 cup of white flour for every 3/4 cup of whole wheat flour that the recipe calls for.

What whole grain flours can I substitute at 1:1 ratio?

When it comes to healthy muffin recipes with whole wheat flour, you can use spelt flour, white whole wheat flour or whole wheat pastry flour at 1:1 ratio. With almond flour recipes, most recipes can be made with 1:1 almond meal for almond flour but muffins will be more dense and rise less.

How can I use gluten-free flours in your healthy muffin recipes?

I find all gluten-free flours need adjustments. It’s best to follow the recipe as is or check the recipe post for any substitutions tips first. You can’t substitute coconut flour with any other flour. You may use all-purpose gluten free flour instead of wheat flour but will need to add a splash of milk. Substitute oat flour by weight – 1 cup of oat flour weighs 90 grams and 1 cup of wheat flour weighs 120 grams.

How can I make healthy muffins without eggs?

Leavening agents like baking powder and baking soda help provide lift and texture to the muffins. More so, with a little healthy fat or oil, muffins are made lighter too. One of the best tips for making light and fluffy whole grain muffins is being careful not to overmix the batter, which can overwork the gluten and yield dense, tough muffins.

What is the best way to store muffins?

I find the best way to store majority of muffins in any container covered but with a little bit of air circulation for the first 2 days. In many muffins mold can build up quickly if tightly closed. However, some muffins need tight seal storage to avoid from over drying. Store at room temperature on the counter. After, place in the fridge for 2-3 more days.

How do I freeze muffins?

Bake, cool completely and freeze leftover muffins in airtight container for up to 3 months. Thaw in the fridge overnight or on a counter for a few hours.

What is the best way to reheat them?

Pop muffin in a microwave, toaster oven or reheat in the oven at 350 F for 5-10 minutes.

Instructions

  • Preheat oven to 375 degrees F and spray non-stick 12 muffin tin. Set aside.
  • In a large mixing bowl, gently whisk egg. Add bananas and mash. Add applesauce, maple syrup, oil, vanilla, baking powder and soda and salt; whisk to combine.
  • Add flour and gently stir until well incorporated. Do not over mix – that produces a tough muffin.
  • Fill each opening almost full with batter and bake for 22 minutes or until a toothpick inserted in the centre comes out clean.
  • Let muffins cool for about 5 minutes and then transfer to a cooling rack to cool off completely.

Top Tips for Making Healthy Soups

  • Adjust the sodium accordingly: I always use low sodium broth, that way I can adjust it myself!
  • Saute the ingredients: While this isn’t always necessary, browning your meat and vegetables can pack in tons of flavor to simple soups. 
  • Simmer, don’t boil: Boiling soups can easily turn veggies and beans mushy, which is why a slow simmer is always preferred. 
  • Add an acid: Adding an acidic ingredient to any soup helps to add brightness and create wonderful depth of flavor. Vinegar, lemon juice, lime juice, wine, or even tomato paste all work.
  • Use dairy sparingly: All of these healthy soup recipes go easy on any heavy dairy. Instead, you can add a spoonful of yogurt, cream or coconut milk to the top of your soup for just enough creaminess.
  • Make it more hearty: With the addition of pasta and whole grains like cooked rice, quinoa, buckwheat or starchy veggies like potatoes. Protein and fiber dense additions like legumes are also great for making a soup into a hearty meal.
  • Add fresh herbs: I can guarantee you that a handful of fresh parsley, fresh dill or fresh basil will take any soup from zero to hero.
  • Don’t take shortcuts: The only shortcut worth taking with any soup is using an Instant Pot. That way, it still tastes like it’s been simmering for hours but in a fraction of the time. Any other shortcuts will impact the flavor of your broth and not give it time to meld and develop it to be the best it can be.

How to Store Soup

One of the best things about these healthy soup recipes is that they are usually extremely freezer-friendly and perfect for meal prep. Unless they contain a lot of dairy, pasta or potato chunks.

This means you can make a large batch, serve some right away and then freeze the rest for later. Most healthy soups will keep well frozen for 3 to 4 months. These are my favorite glass airtight containers for freezing soup.

Also soups keep well in the fridge for up to 5 days, usually.

The best accompaniments to any healthy soup recipe will vary based on the flavors and textures in the soup. However, here are some of my favorite side dishes for soups.

  • Sandwiches: Especially a grilled cheese!
  • Grains: For a heartier soup, you can add a portion of grains (rice, quinoa, couscous, pasta) directly into the soup and voila – instant hearty meal!
  • Salad: Soups pair wonderfully with leafy green salads like this lemon kale salad or a simple lettuce salad.

Depends who you ask. In my opinion, soups are packed with vitamins, minerals and nutrients while keeping flavor at a maximum, but fats and calories usually at a minimum. Healthy soups are a great way to pack in fiber and veggies, usually from frugal ingredients in your kitchen. So any of these healthy soup recipes is the best soup.

What is the healthiest soup to eat when you’re sick?

Maybe it’s cliche but you can’t get much better without a bowl of chicken noodle soup when you’re feeling under the weather. In fact, any of the above easy soup recipes that combine meat, veggies and noodles are a favorite of mine for when I need a pick-me-up!

How do I spruce up homemade soup even more?

There are several ways to jazz up your soup including adding fresh herbs and spices, finishing it off with something acidic (lemon juice or vinegar) to add brightness and depth, adding more umami flavor (soy sauce or aged cheese), or even simmering the soup for longer to reduce it for a more flavorful broth!

If you have yet to make soup, my biggest advice is to first sear any meat or brown any veggies for an easy way to pack in tons of flavor.

52 Healthy Soup Recipes: Chicken Wild Rice Soup

One of my most popular healthy soup recipes. Chicken Wild Rice Soup is easy to make in the Instant Pot, slow cooker or stovetop. Made without heavy cream, butter or flour it is healthy comfort food in a bowl.

Ingredients

Instructions

  • Slow Cooker: Add chicken, onion, garlic, carrots, celery, potatoes, mushrooms, wild rice, water, thyme, salt, and pepper into a large slow cooker. Then just cover and cook on High for 5-6 hours or Low for 8-10 hours.
  • Remove chicken from slow cooker and shred using 2 forks. To the slow cooker, add milk, mustard and garlic powder. Use an immersion blender to puree the soup to desired thickness. Add  the shredded chicken and parsley. Stir and serve hot.
  • Stovetop: Add avocado oil to a large heavy bottom pot or Dutch oven. Add onion, garlic, carrots, celery and fresh mushrooms (if using), and saute for 5 minutes. Add chicken, potatoes, wild mushrooms (if not using fresh), wild rice, water, thyme, salt, and pepper. Bring to a boil, cover and then for 45 minutes on low heat.
  • Once cooked, remove the chicken and shred using 2 forks. Add milk, mustard and garlic powder; to the pot. With an immersion blender, blend the soup to desired texture. Return shredded chicken to the pot and stir.
  • Garnish with parsley and serve hot.
  • Instant Pot (6 or 8 quart)****: Add chicken, onion, garlic, carrots, celery, potatoes, mushrooms, wild rice, water, thyme, mustard, garlic powder salt, and pepper to Instant Pot. Cover, set pressure valve to Sealing and press Pressure Cooking on High for 25 minutes. Wait 10 minutes and do a Quick Release to release the pressure by turning the valve to Venting.
  • Remove chicken from soup and shred with 2 forks. Add milk to instant pot. With an immersion blender, give a few pulses until soup is desired thickness. Add shredded chicken, parsley, stir and serve hot.

Notes

  • Store: Refrigerate in an airtight container for up to 5 days.
  • Freeze: Up to 3 months.
  • Freezer Meal: In a large Ziploc bag, add all ingredients (except water, milk and parsley), release out as much air as possible, seal and freeze for up to 3 months. If cooking in slow cooker, thaw in the fridge for 24 hours, add to slow cooker along with water and cook as per above instructions + 1 hour. If cooking in Instant Pot, cook from frozen for 25 minutes with Quick Release. Then follow last step in the recipe.
  • For the slow cooker version, I used frozen drumsticks. But ANY type of chicken works – raw, bone in/skin on or boneless/skinless, cut up whole chicken, and cooked cubed/shredded. If using cooked chicken, add towards the end of the cooking time. You should also use chicken broth instead of water since the chicken won’t be cooking in water creating a broth.
  • Water or broth? Use water with raw chicken and broth with cooked chicken.
  • Dairy free: You can use any unsweetened plant-based milk, but soup will just be less rich but still creamy.
  • For 3 quart Instant Pot, cut recipe ingredients in half, but keep the same cooking time.

What Is the Difference Between Almond Meal and Almond Flour?

Main difference between almond meal and almond flour is the type of nuts it is made of.

Almond meal is ground up whole almonds that haven’t been blanched. This means the outer skin hasn’t been removed from the almond before grinding.

Almond flour is made from blanched almonds. It is more soft, has fine and fluffy texture, and is lighter in color. Almond meal is denser with a grittier texture and has a slightly more nutty flavor.

If the recipe isn’t specific about it, you can usually use them interchangeably. The result you get will differ slightly depending on which you decide to use. If the recipe requires a lighter, softer result blanched almond flour is usually the way to go to achieve a right texture.

Cooking and Baking with Almond Flour

Baking with almond flour: Most important thing to know is that you cannot replace regular wheat flour with almond flour without making other changes to the recipe. Because there isn’t any gluten in almond flour, it will rise differently, needs different amount of liquids and more binding agents like eggs.

It is best to follow almond flour recipes as written! Unfortunately, there is no magic ratio for substitutions in all-purpose flour recipes. It is case by case situation because almond flour, and all gluten-free flours, is a very different flour.

45 Almond Flour Recipes: Almond Flour Banana Muffins

One of my most popular recipes with almond flour! Almond Flour Banana Muffins are easy to make with just a blender and melt in your mouth delicious!

Instructions

  • Preheat oven to 350 degrees F. Prepare a silicone muffin tin with cooking spray. Set aside.
  • To a powerful food processor or blender, add bananas, eggs, vanilla, cinnamon, baking soda, baking powder, and salt. Process until the mixture is smooth.
  • Add almond flour. Process just long enough to combine the ingredients. Then, scrape the walls down and process again just enough to combine. Add in the chocolate chips, stirring with a spatula.
  • Divide muffin batter into previously prepared muffin tin using an ice cream scoop. Bake for 30 minutes, or until golden brown and an inserted toothpick comes out clean. Remove from the oven and let the muffins cool for 20 minutes. Enjoy!

Notes

  • Store: Muffins should be stored in a cool dry place for up to 5 days.
  • Freeze: Up to 3 months.
  • Over ripened bananas are a must! If your batter is too thick, it means the bananas you used were not ripe enough. You also can’t substitute for any other fruit. 
  • It has to be almond Flour. This recipe is tried and true when baking with almond flour. I do not recommend using any other flour. Some readers have used almond meal,  but I have not tried. 
  • Whisk: If you don’t have a food processor or blender, some readers have reported good results by mixing the batter with a whisk. I haven’t tested this myself and I assume that the texture would not be quite the same. 
  • Mini and jumbo muffins are possible, but baking times will differ. I recommend keeping a close eye on muffins and doing a toothpick test.
  • Remember, baking is a science. For the best results, I strongly recommend following the recipe!

Ingredients

  • 12 eggs large
  • 4 cooked chicken or turkey sausages diced
  • 1 large onion chopped
  • 1 bell pepper finely chopped
  • 5 kale leaves rib removed and chopped (or a few handfuls of spinach)
  • 1 tbsp oil for frying
  • 1/4 cup any milk or water
  • 1 tsp baking powder
  • 12 whole wheat burger thin buns English muffins or bagels
  • 12 slices of any cheese
  • Salt to taste
  • Cooking spray I use Misto

Instructions

  • Preheat oven to 375 degrees Fahrenheit and spray large 16 x 11 rimmed baking sheet generously with cooking spray.
  • Veggies: Preheat large skillet on medium heat and add oil. Add onion and saute for 3 minutes, stirring occasionally. Then add bell pepper and saute for another 3 minutes. Add kale or spinach, a pinch of salt and pepper, and saute for 1 more minute, stirring occasionally.
  • Eggs: In a large bowl, whisk the eggs, milk, baking powder, a pinch of salt and pepper. Add cooked veggies, sausage and combine with spatula.
  • Pour egg mixture onto previously prepared baking sheet moving sausage and veggies around to even them out. Bake uncovered for 25 minutes.
  • Remove eggs from the oven, loosen them up from the edges with spatula and cut into 12 squares (I use same spatula). Then gently separate squares from the baking sheet on the bottom.
  • Assembly: Cut 12 pieces of parchment paper 1 inch wider than a bun. Cut 12 pieces of aluminum foil twice wider than a bun. Place egg on the bottom part of bun, top with cheese and then top part of bun. Wrap tightly first in parchment paper followed by aluminum foil.

Reheating:

  • Option #1 (crispy): Remove wrapping and bake in preheated oven to 425 degrees F: fresh – 10 minutes, frozen – 15-20 minutes.
  • Option #2: Place wrapped sandwich onto preheated panini press and cook for 10 minutes – if fresh, 15 minutes – if frozen.
  • Option #3: Remove foil and microwave in 45 seconds increments. Microwaves vary, so you will have to experiment how long.
  • Option #4 (crispy): Bake uncovered in a toaster oven – watch closely for time as ovens vary.

  • 8 corn tortillas or tostada shells
  • 3 medium tomatoes diced
  • 4 medium avocados diced
  • 3 tbsp red onion finely chopped
  • 1/4 cup cilantro finely chopped
  • 1 tsp ground cumin
  • 1 tsp chili powder
  • 3/4 tsp salt
  • Juice of 1 lime
  • 15 oz can low sodium black beans drained and rinsed
  • 3 cups shredded chicken like rotisserie or chicken breast

Instructions

Bake tostada shells:

  • Line a large baking sheet with a silicone mat and place tortillas in a single layer. Spray both sides of the tortillas with cooking spray and a sprinkle of salt. Bake at 400 degrees F for 6 minutes per side.

Make guacamole salsa:

  • Mix tomato, avocado, red onion, cilantro, cumin, chili powder, salt and lime juice.

Assemble tostadas:

  • Top each shell with guacamole salsa, beans, chicken and cheese.

Fish Tacos:

Fish Taco Sauce:

Instructions

  • Dredging for fish: In a medium bowl stir together flour, taco seasoning, garlic powder, cornstarch, salt and pepper. Set aside.
  • Fish taco sauce: In a small bowl stir together yogurt, mayo, lime juice, taco seasoning, cayenne and black pepper. Set lime crema sauce aside.
  • Toppings: Chop and prepare the toppings.
  • To cook fish: Preheat large ceramic non-stick skillet on medium-high heat and swirl 1 tbsp of oil. In batches, dredge pieces of fish in flour mixture and fry for 2-3 minutes per side or until crispy and brown. Fish cooks fast, so don't over cook. Do not overcrowd the skillet – helps to keep fish crispy. Remove onto a plate.
  • To assemble tacos: Warm tortillas in a cast iron skillet on high heat for 10 seconds per side and pressing on with spatula. Fill each tortilla with 3-4 pieces of fish, add toppings and drizzle with sauce. Serve immediately with your favorite toppings (please see suggestions in notes).

Best of Healthy Egg Recipes: Instant Pot Egg Bites

A healthy egg recipes family favorite! Instant Pot egg bites are easy to make and ready in less than 15 minutes. Made with one ingredient and easily customizable, perfect for breakfast, brunch or snack!

Ingredients

Optional Mix Ins:

  • Handful of spinach finely chopped
  • 1/2 large bell pepper diced
  • Parmesan cheese grated

Instructions

  • In a 4 cup measuring cup, add eggs, water, baking powder, salt, pepper and whisk well.
  • Spray msilicone mold with cooking spray. Add mixture into each of 14 openings about 2/3 full. If you want, add veggies and cheese now and do not stir. Close each mold with silicone lid and stack in a staggered position, so the cups don’t line up. Then you won’t have lids sucked in and deformed bites.
  • Then place on top of
    the trivet with handles. If your trivet doesn't have handles, you might struggle getting mold placed carefully into a 6 quart pot. It is very tight and be careful not to spill.
  • In Instant Pot, add 1 cup cold water. Place trivet inside, close the lid, set pressure release valve to Sealing and press Pressure Cook on Low for 8 minutes – 8 quart Instant Pot, 11 minutes – 6 quart Instant Pot.
  • After turn valve to Venting. Using oven mitts and holding onto handles of the trivet or to the mold itself, remove from Instant Pot.
  • Open the lids, cool off a few minutes and using small silicone spatula go around the edge staying close to the walls of each opening and release egg bites one by one.

Notes

  • Store: Refrigerate in an airtight container for up to  5 days.
  • Freeze: Cook and cool egg bites. Pop in an airtight glass container with a lid and freeze for up to 3 months.
  • Where can I buy a silicone mold? I bought this one, actually a set of 2, on Amazon. What I like is that it has 2 lids and not 1, to prevent spilling. 
  • Prep toppings small: You can add anything you want. Just make sure to dice, chop or grate finely since egg bites are small.
